Bolo do caco: typical Madeiran food! You will find bolo do caco in practically all restaurants on Madeira and at many street food stands.

SO WHAT IS IT, BOLO DO CACO?

It is a Madeiran flat bread.  The bread, bolo, is cooked on a caco: a hot basalt stone, thus the name. This bread is served in many delicious ways. Essential is homemade garlic butter: bolo do caco and garlic butter are best friends. Restaurants will serve the bread with garlic butter as an appetizer, and at cafes or food stands you’ll find it with chouriço or ham, and of course garlic butter. It is also used for various sandwiches ‘Madeira style’, like Prego Especial.

ADDICTED TO BOLO DO CACO

When we arrive on Madeira, getting our ‘bolo do caco fix’ is one of the first things on our mind. Once we are in possesion of a steaming hot bolo do caco con chouriço, we sprint to the harbour, occupy a sunlit bench and enjoy this simple, but oh so yummy treat.

LUCKILY, I CAN MAKE MY OWN!

Since we really, really like to eat this, I searched the internet for a recipe. Now, when we get really homesick for Madeira and bolo do caco, I can make my own. Of course, I don’t have a caco in my kitchen, so my version doesn’t turn out just as perfect as the real Madeira ones, but is’s still very good! I will soon share a recipe on the website so all can enjoy.
